I've done whole mackerel in foil a few times in the oven and it's been great. Some cajun seasoning with olive oil is a good combo to drizzle over it and a bit of grated ginger and garlic, soy sauce and spring onions gives it a nice kick wrapped in foil.

Hi discodown, I find that oily fish like mackerel and sardines are perfect for cooking whole, particularly on the barbecue.

I do this with mackerel when on holiday, I put them on the barbecue whole and after cooking pick away with some crusty bread, olive oil and lemon.
