Monach flies from Manchester and we are going with Thomas Cook.  We loved the feel of the place, really old fashioned with the big castle dominating the town, the quaint, meandering "roads" covered with wisteria, the friendliness of the locals, the great food and great harbour.  There's no beach as such but plenty of places from which to go swimming in the sea. We did a day trip to Petra, and couldn't imagine spending longer there. There are hot springs a walk away at Eftilou and plenty of boat trips to Turkey, other towns or remote islands.  It was our first time in Greece and it was just amazing. We saw one cloud in two weeks. We'd be sitting on the terrace drinking Mythos and people would comment "another day in paradise eh!"  As you can probably tell, I'm itching to get back. You're talking 5-7 euros for a litre of wine, 2 euros for a bottle of beer in a cafe or 1 to 1.5 euros in shops.  With food it depends what you have. Strangely for a fishing island we found fresh fish to be quite expensive. 14 euros for sea bream for example or 10-12 euros for a couple of grilled octopus legs. You got better value for money with the different meze and meat dishes. Mind you we loved the food with the exception of the humous, which wasn't the Lebonese style made with chick peas but was a kind of mushy peas make from lima beans  We stayed in self catering up near the castle. There was a shop close by which does various pies and croissants for breakfast. It had the advantage of being away from the harbour or town centre which meant it was very quiet but had the disadvantage of a steep drunken climb home each night.  We tended to eat out most evenings, the number and quality of restaurants is superb, or if we ate out for lunch we'd eat in at night with the usual cheese, dolmade, olives, bread, giant beans etc.  We went on the last 2 weeks of the season. Our plane back from there was the last one of the summer. This meant things were closing down and getting quiet while we were still there. The bus service suddenly stopped in our second week and a couple of the cafes were closing for the season. But it was also very quiet and non-touristy, which was great.  The castle is well worth a look. There is also a walikng guide to Northern Lesbos which includes a lot around Molyvos, although it was too hot last for much walking.  Lesbos is massive for birdwatchers. The migration period has ended but over the past 8 weeks the updates I've had from there have been amazing. If you have any interest in that sort of thing then Spring is the time to go. We can't find anything staying in Molyvos but there are quite a few deals for Anaxos.  Anaxos is ok- but not as scenic as Molyvos - more of a beach with accommodation type of resort. It is near to Petra - my preference would be there. You can get buses from both , I think, to Molyvos.  The other place perhaps worth looking at on Lesvos is Skala Erressos which we really like although it is little more isolated . There is a bus (hourly-ish) that runs from Eftilou - Molyvos - Petra - Anaxos through the day which is handy, taxis are also abundant and cheap.
