Recipes: Nice, easy, quick recipes...

Hi can anyone recommend any decent recipes that are quick and easy?

 

We eat meat and like most things, so suggestions would be lovely.

 

I was hoping to be able to make some kind of sauce aswell.... but anything will be considered (within reason, of course!!!).

Heres a good one. Serves 2 hungry people

 

You will need

 

a chorizo sausage

fresh spinach

cherry tomatoes (about 6)

pasta

a red onion

 

Heres what you do

 

finely dice the onion, deseed and finely chop the tomotoes

 

cut the sausage into bitesized chunks, fry it very gently with no oil. the heat will release the fat and oil within the sausage

 

start to cook the pasta

 

put the sausage to one side and increase the heat in the pan, fry the onion until it colours and starts to sweat then reduce the heat and add the tomatoes

 

once the pasta is cooked, drain it and pour it into the other pan, coat it with the oil and return the sausage to the pan

 

add the spinach and stir it through until it wilts and then serve up after dressing it with pepper and extra virgin olive oil

Here's a recipe for a tasty nut-based snack!

 

1. Buy a packet of peanuts.

2. Open packet, put peanuts in mouth.

3. Chew and swallow.

 

Serves 1. If holding a dinner party, simply buy more peanuts.

You should have said "not suitable for nut allergy sufferers", incase one tries it and dies.

Stroganoff is quick, and can be steak or mushroom based, to it's ok for everyone*

 

(I don't do exact measurements or times)

 

1lb steak and 1lb mushrooms, or just 2lb of musrooms, slices thinly

1 large onion, chopped as small as possible

knob of butter

a big (half pint ?) tub of double cream (or creme fraiche)

Brandy (a miniature bottle worth, or a bit more)

Paprika (to taste, I like lots)

Strong beef stock (or 1 OXO in a couple of tablespoons boiling water)

 

Melt butter

Add onion

Add steak and mushrooms (or just mushrooms)

Fry briefly until onion soft, meat just cooked

Add brandy

Ignite the brandy to burn off the alcohol (watch out for eyebrows at this point)

Add double cream

Add paprika

Reduce until sauce is required thickness, adding stock as required to taste.

 

Serve on rice, or even better, buttered noodles.

 

 

*except vegans, but I don't know any of those.

Salmon is really easy.

 

I usually put some Thai 5 Spice and Indian 7 Spice (or other way round) and some soy sauce on to the salmon, wrap in tinfoil and put in the oven for 20 minutes, unwrap and carry on baking for about 10 minutes (so goes crunchy on top) and then serve with rice with kidney beans/noodles/salad. Mmm.

Not that i want to be pedantic but you should really use sour cream. it doesn't actually matter but thats the classic way
