Apart from the usual burgers and sausage what else do you do?

We have kept having the same boring stuff all the time but I want something new. We tend to do burgers, sausages, ribs and sweetcorn and that's about it! I don't like cooking chicken on a bbq because I don't trust it.

So what do you put on your BBQ?

Banana's are always a winner and there is nothing better than fish when its been BBQ'd. Chops are good and roasting peppers and onions is great. If you're organised enough to keep a part of the grill meat free pineapple is a wonder

part cook your chicken in the oven then just finish it off on the bbq. Them cheap turkey joints go nice on a bbq. Fish only takes minutes on the bbq.

I know but BBQ night is my night off from cooking so I don't want to have to cook the chicken first :D

What kind of fish would you BBQ?Pretty much anything is fair game and will work to one degree or another. But obviously meaty steaky type fish is best, tuna, shark etc are really good. Oily fish like mackeral and sardines work fantastically but if you want to do something that flakes like whitfish or salmon then really need to use the whole fish or it breaks up

Do you wrap the fish up in foil?Salmon and flaky fish you can, but bear in mind if you do that you're not really barbecuing it you're steaming it.

You can also get a fish grill which is a sort of clamp you can use to keep the fish together, they wor pretty well

Chicken kebabs [ no don't sigh and look martyred lol ]

cutting the chicken up into cubes cuts down the chance that the middle will be uncooked
Cut up about 4 chicken breasts into cubes
put in a basin with

5 tbsps white vinegar
juice and zest of one lemon
1/2 a cup of water
2 tsps cumin [ground]
2 tsps ground coriander
1 tsp dried ginger or 2 tsp fresh or bottled
2 cloves garlic, crushed
1 tsp salt
1 tbsp turmeric
1 tbsp paprika
1 tbsp parsley
1 tsp mint
black pepper

refrigerate for a couple of hours then thread the cubes of meat onto skewers along with slices of onion/pepper/aubergine/courgette etc etc

Remember to soak your skewers in water for half an hour

Why do you soak skewers in water for half an hour? i assume it stops them burning but not heard of that before?

I think some people cook fish in wet newspaper on the bbq for a smokey flavour. Try on the river cottage website or jamie olivers.

Indian cheese. It has basically no flavour but takes in any flavours you add to it and you can cook it in a number of ways.

It does indeed stop them burning and it can also reduce the chance of spliters, especially if you're using bamboo skewers.

Open cap mushrooms filled with garlic and herb butter, dont take long at all.

Lamb neck filled rubbed with garlic and mint - and a bonus this doesnt hurt you if it is served rare as long as the outside is cooked.

Sausages and burgers bother me more about health risks if not cooked properly. I always do chicken on BBQ - just make sure drumsticks are cooked on a low / medium heat and not a high heat and that you check them beofre serving if the meat is white and no pink juices you are fine.

You could always wrap the chicken in foil and place it on the BBQ until you are sure it is cooked through and then just take it out of the foil for a few minutes and place on BBQ before serving if you didnt want to pre-cook in oven adn didnt want to just trust it over the coals.

If you are really concerned you can get electronic temperature probes easily enough just make sure the centre temp of the meat is above 74C and you are fine.

I cut chicken breast into chunks and put on skewers with different peppers and onion, sometimes add other veg or different meats, its about the only time i can get my daughter to eat onion and peppers! As the chicken is so small it cooks easily, with none of the worries of drumsticks.

It has to be kebabs for me too, with loads of different coloured veggies: peppers, mushroom, courgette, red onion etc. Marshmallows are great too but get v hot, esp if on metal skewers!

Love fish and shell fish on the BBQ (any robust fish as others have said), fillet steak and other top cuts of meat, kebabs of any kind.

Someone mentioned Paneer. I have both that and Halloumi (must be well marinated) for a nice change and it keeps the veggies quiet.

Raw tiger prawns marinated in fresh lemon and lime juice, chilli flakes, chopped garlic and a touch of olive oil. Put on skewers (or not) wrap in foil and stick them on ya barbi, yummy.... :thumbsup:

halloumi is amazing on the bbq, i had mackerel with curry type spices too that was goos, and yeah the wrapping fish in wet newspaper is a good idea, wrap it up dry then dip the whole thing in water then put on the bbq, when all the newspapers burnt away its done
