    My advice would be to change the name entirely. The Cutlers carries a reputation for being a tough boozer in a tough place. People from outside Gleadless wont go there. Go and have a word with the Licensing Officer at Snig Hill for a run down on the issues when this was a pub.

    It was on my area three times over the years as a managed house. Joe Senn ran it as a tenant with a firm hand prior to that.

    Good luck with it...but there has to be a better site in a better area to start a business.

     

    Thanks il try look it to that may get a list of who not to let it :) so far so good can't complain with the business I knew it was a ruff pub befor I took it over the location didn't really matter to me as if your good at what you do should be able to do business any where? Look at chains like akbars at medowbank road it's near a sewage treatment centre still busy! I was gob smacked the other day this bloke walks in and says to me sorry I'm not dressed properly (as in smartly) would you still serve me? I didn't expect that from the customers I'm getting :) as for the name cutlers has been hear befor I was even born and I was after a unique name and so much history it would not only be a shame but disrespectful to lose that name thanks for your comment :)

  3. Last night in Manchester, the little Indian in Walkley called Cafe Masala won the national English Curry Award 2011 in the Best Indian Take Away Category!!

     

    We first won in the regional yorkshire and humber category (against the likes of Jaldi Jaldi from Leeds, the new venture of James Caan from Dragons Den) and then - quiet unbelievably - went on to win in the overall national category against some big legendry names from length and breadth of this country.

     

    We would like to thank all our fantastic customers for nominating us - it was indeed a night to remember for the team Cafe Masala.

It would be interesting if someone dared to open a truly high end Indian restaurant with just a handful of starters, mains etc cooked fresh which change regularly rather than the usual curry 15 different ways places we have now which surely must all come from one pot with minor changes...?

     

    Something to rival artisan, Marcos or Morans?

     

    Or would it fall flat on its face?

     

    Do Sheffield folk only want poppadoms, bhajis and bhunas?

     

    I'd say we are about 5years away from our first proper fine dinning Indian/Bangladeshi/Pakistani restaurant but will the majority support it? If anyone did one now in Sheffield ( e.g lasan in Birmingham) it would fail we are just seeing fine dinning restaurants pop up in the uk most shut after 6months of tradeing Sheffield is not ready yet if it was then cafe guru and dosanj would have still been in business

  5. This place had massive publicity before it opened and people have believed the hype, I have been twice and had far far better curries at much less vaunted places.

     

    200.000.00 worth of marketing this year alone food is good best out of the chains but not doing anything what your avrage curry house is doing real Indian restaurants would have to be vegetarian as most of India is vegetarian it's to do with there beliefs I don't really understand why everyones thinks Indian food is so nice when 80% of the uk have never tried it? It's the Bangladeshi and Pakistani community that gave uk the curry houses so why do we call them Indians? And then mone that they not real Indians? And as for akbars it's Kashmiri food that's what is says on the sign I'm sorry but calling it an Indian is just being ignorant and yes curry is eaten in Bangladesh and Pakistan not just India :)

Lol Bombay duck very hard to get hold of these days it sounds like you know what your talking about (if evei didn't remind me) I would have probaly just done that for my vegi selection but thanks to her veggies will have a good selection to chose off we should be open in the next few months

  7. I think you make some valid points. The hygiene is a big question for me. Maybe if the buffet was served by servers it would solve the problem, but when everyone helps themselves, I remember the stories of what they used to find in the bins in the scoop and save places!:gag:

     

    I like my food to be served by an establishment I trust, preferably with a good star rating from the local authority scores on the doors program.

     

    So, in my opinion, if it was served by servers, it is something I might try.

     

    do you mean buffet served by a server? that will possibly get rid of the hygien issue but still have the quality issue? :confused:

  8. You're right, that's why I'm a greedy vegetarian rather than a chef or restaurant manager :) Anyway, good luck with your venture, I think you've taken so much potential customer feedback on here you're bound to get it right! Hope it works out for you

     

    its a brilliant idea i did think about it about doing a indian tappas in town a few years ago (grate minds think alike hey lol) but couldnt commit myself iv got a good boss behind me :D whos a good man and a brilliant chef im sure he will love it and like i said think it will make a grate day menu :D so well done both of you for the reminder.

  9. How could you forget vegetarian food? India probably has more vegetarians than any other country and a rich and varied vegetarian cuisine. You say not a lot of restaurants cater for vegetarians - have you never been to India? :hihi:

     

    except bilash takeaway in sheffield can you name anyother indian/bangladeshi or pakistani restaurants that cater for vegetarians? (that have more then just a little selection at the back of there menu and be honest becouse i will check up ) im doing a bangladeshi restaurant as i said in my previuse posts its just makes it easyer to say indian so everybody understands (as alot of people dont know the diffrence?:roll: ) and back in 2003 i have been to india pakistan and bangladesh when we did our restaurant in chesterfield. also alot of people say they like indian food? how ever alot of people in my point of view have never eaten indian food (as most of the restaurants in uk are bangladeshi or pakistani) and before you say it lol in the asain community we call indian restaurants (indian) bengali restaurants (bengali) and pakistani restaurant are called (kashmiri) they are not put in one catogory (untill everyone knows the diffrence unfotanately im stuck with the indian lable ) iv put some links on so every one can be a little wiser :D

But....(sorry if I'm hijacking your restaurant thread) you effectively could do it by offering each of the main dishes at say, one third size/one third price without any extra effort other than adding it to your marketing and menu. So, 2 customers might order some popadoms then 5-6 small size main dishes with rice or breads rather than the usual two? I reckon if you explained that in your menu it would be really successful, lots of people would like to have the opportunity to try different things without completely committing to it as their sole main course, I think

     

    No it's fine lol it will take longer becose instead of makeing one dish per customer the chef is makeing 5 different dish's per customer 5 will take longer to cook then 1 so waiting time will Inceease and he will have to cook for many not just one so if a table of 4 come in and all Oder the thali with 5 diff dish's each chef has to cook 20 different dish's :confused: if I don't get it right he will chop my head off lol but leave it with me il fined away I like the idea as my day menu in the evening I might not be able to give u much of choice like 5 or more but if it's sucessfull in Sheffield and other restaurants follow then I'm sure someone will get it right :D

Il work on it and try doing as much as I can from the opening still have a few months to figur it out but it's no good just me doing it say I fail and my place shuts :( (it won't do my regulars won't let that happen I can confidently say) :D but say it dose I still want you guys to enjoy tridishnal dish's so hears the plan tell your local Indian/Bangladeshi and Pakistani restauranturs that someone is doing tridishnal curry (home cooking) and you loved it (even if you didn't) it's the best dish you've ever they will think they are going to loses trade and hopfully should offer you tappas or tridishnal food again it will take some time but it will be worth it I hear alot of people say it's not real Indian or not tridshnal so hears your chance to change it for good I can't do it you as a customer can! POwer to the people yaay :D

  12. When we were on holiday in Sri Lanka I ordered "vegetable curry" in a restaurant. Instead of one veggie curry I got 7 different small vegetable curries it was great!

    I think a better idea to a buffet would be to offer that sort of thing. A variety of small dishes which you could mix or match. So many dishes for £5 so many for £7 so many for £10 etc.....

     

    In srilanka or India/Bangladesh/Pakistan they cook it all In big pots and reheat it and serve the food it's called handi cook the problem il have to overcome is how to serve so many dishes from fresh without makeing the custmers wait too long daytime i think it should be possible it's a different matter on a fri or sat nights weekdays and daytime I think it's possible same problem with the tridishnal menu serving time as both will take longer to cook:confused:

  13. "vegetarian Indian tapas" - that is, frankly, restaurant heaven for me. I've never encountered it in reality so have to summon up a rough approximation in my own kitchen occasionally

     

    You will still have to wait for a bit I will get around to doing it will take some time as iv got to do so will have to think hard iv got a good idea how to do it but it has to be perfect within 6 months of opening I hope to have ironed out the cresses and everything will be in place for every one to enjoy Im takeing alot on so thats tridishnal and tapas aswell as opening in the day hmmmm will need alot of staff and good staff is hard to find in the restaurant trade (let's see wher I could nick some staff from lol)

  14. Actually, we get the most choice in your average British high street Indian compared to most other types of places! I've seen from your threads that you're looking to do something a bit different to the average place, so don't forget us :)

     

    Il get one of the chefs working on that straightaway (more choices of vegi food) it could just go on my standard menu as we are going to do a tridishnal menu as well we will have some lovely Indian/Bangladesh veg so you will be in for a treat :D

  15. Don't zeenat have a buffet night once a week ? I think some people would view buffet restaurants as having lower standard food that a normal restaurant.

     

    I agree with you completely but aagrah do a buffet too so dose Kashmiri aroma think we should run the normal menu as well as the buffet so people can chose what they have every one happy then :D I personaly won't eat in a buffet restaurant.

    Might do it once aweek few people are asking for it (I personally don't like buffets and avoid it) but I'm trying to cater for every one so once aweek is a possibility boss might straight out say no lol

  17. A lot of Indian, Pakistani, Chinese restaurant's do buffet these days. I peronally avoid them like the plague, because like you have said, the food is never good quality. I guess it is a way of getting bums on seats during the quiet times.

     

    Good luck with your new venture. When are you opening?

     

    We are looking to open in the next 2 to 3 months I personally don't like buffets but alot of people seem to want it if I did do it then it would be just once a week just to keep some of the customers happy most days and night it will be alcart off the menu and thank you for your feedback your will be one of the few people who can say I played apart in building this restaurant :D

  18. Hi iv been in this forum doing some research as I'm opening a new restaurant in Sheffield this is most likely my last tread and the last thing I need to know buffet? What is it that you like about buffet! What would be your ideal buffet! And how offten do you have a buffet! Me personly I don't like buffets as I think the food has no quality also don't like the idea of waisting food thats just Left over also if you go late god knows how long the foods been sat there and If I can't eat it then how can I give to a customer to eat that's my opinion I'd like to hear yours thank you for putting up with me for the past few weeks :D hope I didn't annoy you too much lol and a very BIG thank you to every one who helped me out :D
