My guess is the head gasket. have a look at your coolant and your oil, look for oil in the coolant and or water in the oil. It looks a bit like mayo or toffee sauce... The thermostat doesn't affect the heater, it opens when the car warms up and allows the water to go through the radiator and not overheat.
