The_Knifeman   10 #39 Posted December 7, 2012 is there any cutlery experts on the forum who can advise as to what is the best sort of carving knives to buy for general household use.I have been told that you cannot sharpen stainless to a good degree of sharpness and that the best carving knives should have carbon in their make up,is this correct and I apoligise if I have hijacked this thread but I am sure this info could be of use to the original poster.  Stainless with a higher carbon content does tend to sharpen better, and hold it's edge better. When considering a purchase, as with most things, you get what you pay for. Buy the best you can afford.  Beware of fake knives around this time of the year, particularly Global, Wusthof, Victorinox and Shun Steel - they are poor imitations, and not worth the risk. shebba   10 #43 Posted December 8, 2012 To my certain knowledge there are no stainless steel table or desert knife blades forged in Sheffield since Carrs closed down the forges of Jessops &Rutland . In addition i know of no stainless steel stamping of blanks in Sheffield at the present time.I am referring to spoons,forks& knife handles in Parish patterns or any other pattern.  Every stainless pattern is imported which is a great shame as 2013 is the centenary of the introduction of stainless steel in Sheffield in 1913.  I am the last of 5 generations in the trade.So i do have a good knowledge of how these thing work.  shebba Share this post Link to post Share on other sites Share this content via...
