New Google Trends chart, taking the most famous of the last chart (Sean Bean) and adding some of your suggestions to compare:

Blue: Sean Bean

Red: Brendan Ingle

Yellow: Prince Naseem Hamed

Green: Kyle Walker

Purple: Joe Cocker

Surpisingly (to me, anyway), Naseem Hamed runs fairly close to Sean Bean. Brendan Ingle is nohwhere, except for a slight bump around his passing on the longer chart). Similarly, Joe Cocker doesn't fair too great, only getting a bump around his passing too on the longer chart).

Kyle Walker, though, smashes it and surpasses even Sean Bean fairly comfortably.

Where do they get their data from? That certainly doesn't seem a worldwide view to me.

Do they have to have been born in Sheffield, or does being raised and going to school in Sheffield count? If so, there’s also Emily Maitlis.

Born in Walkley and raised in Frecheville, Ian Reddington has done very well in his acting career.

New chart, replacing Brendan Ingle and Joe Cocker with Emily Maitlis and Ian Reddington:

Blue : Sean Bean

Red: Kyle Walker

Yellow: Naseem Hamed

Green: Emily Maitlis

Purple: Ian Reddington

Ian Reddington doesn't doesn't really register, but Emily Maitlis does well - especially  around the Prince Andrew interview time, and when the recent documentaries/films on that came out. But she doesn't come close to Kyle Walker over any sustained period.

Please satisfy my curiosity; where do Joe Elliott and Jessica Ennis-Hill come in.

Joe Elliott (Green) doesn't really rank anywhere.

Over recent times Jessica Ennis Hill (Purple) doesn't quite beat Sean Bean or Kyle Walker, but has good spikes in August!

But - her 2012 spike (and 2016) on the longer chart totally eclipses everyone else so far:
