In the end a tech guy walked me through switching wifi channels and this seems to have fixed the issues I was having. Yes, my fixed fiber line of 350mbit and a ping of 9ms is better, but my point being a mobile internet connection is decent for most applications except maybe for gaming which 5G will undoubtedly resolve.
