RECIPES INVOLVING SAFFRON

A friend of mine has recently returned from Egypt and brought me back a gift....  a big bag of high quality saffron strands. It's a delicious,

delicate-tasting spice, but something I've rarely used, because it's so expensive to buy over here. Has anyone got any saffron recipes that they could share with me? I tend to cook savoury dishes more than sweet things, but I'll consider anything.

 

So far I've made saffron rice, a saffron fish tagine and a very posh fish pie with saffron mash. I've also used  it in a marinade for chunks of chicken breast and thigh, which I threaded onto metal skewers and cooked in the oven over a roasting tin....all of which turned out really well.

If you purchase Rick Stein’s India cook book you’ll find several recipes involving saffron’

its the most expensive spice in the world! You generally only need to add a few strands per recipe it’s very over powering
