Anyone tried Tripe?

I've had the idea of eating tripe raised, but then I fed raw green tripe to the dog and it was very quickly dismissed while I got my nausea back under control.

 

I'm sure that there are ways to cook it which are less 'tripey' but it would need to be seriously different for me to try it.

 

The way that I saw recently which was at least interesting was to cut it into strips, put it in batter like onion or calamari rings and serve with a dip. The TV presenter looked almost convinced that it was nice. I'm still no closer to trying it though.

Try googling "tripes a la mode de Caen" or "tripes lyonnaise" for two classic french recipes.

 

Basically it needs simmering slowly - the french tend to use wine - I seem to recall my grandmother doing it in milk.

So did my grandmother! Loved grandmother but hated the tripe. :)

Yes, milk with sliced onions. My mum and dad loved it but it wasn't for me.

This was cooked by my mother like this. You can add cubed potatoes. It is called Blind Ash. Don’t forget the salt and pepper.

That's how we used to eat it in the 1970s.

 

The raw green tripe you feed to dogs is really smelly, our dogs eat it. The stuff you just put salt and vinegar on is washed and cooked and perhaps bleached? Not sure how they get it clean.
