It has to be 28 day aged.  The schoolrooms at bradfield dry age theirs on the premises (I know as we did a butchery night there last summer). Will butcher you whatever cut you need with enough notice if you wanted something special...otherwise they always have the usual cuts available.  Thanks for the tip. I'd never heard of the Brooklyn and it looks decent.  La Vaca is very good...cooked to order over hot coals ..yum!
