Making Pasata with homegrown toms

What ingredients do you put into yours?

 

I've just made a couple of batches, will be trying it out over the next couple of days.

Just tomatoes, basil, garlic and onions if liked, season with salt and black pepper to taste.

My tomato base sauce I usally make is:

 

Tomatos(obviousley)

garlic

peppers

various italian spices I have lying around

 

Pop in a roasting tin and cover in olive oil, roast for 30-45 mins, liquidise and sieve.

 

At the moment I freeze but I do have the equipment to 'can' but often cant be ar***.

I've made a herby version and also a spicey version which we prefer.

 

I used:

Tomatoes,

Olive oil,

Salt and pepper,

dried paprika and other dried peppers and spices,

 

all roasted up and pushed through a sieve.

 

occasionally it was a little bitter so I added either a teaspoon of sugar or a drizzle of honey.

 

there's still plenty of toms on the vine so we'll be making some more yet.
