Best chef's knives to purchase ?

My favourite knife is a tungsten carbide edged Fusion utility 5" knife which has stayed sharper than all of my other knives for the last 18 or so years. The only gripe with it is that if you cut things on a ceramic plate it cuts the ceramic glaze too.

Bought some Global Knives ten years ago and they are still as sharp as they were when I got them. They get used on a daily basis and I would not have anything else.

 

Glad I got them when I did as just seen how much the large chefs knife I used is now. £100 eek but well worth every single penny.

 

Yes the handles are light but I found that after a few uses I got used to them.

 

I love my Global knife block set, they are absolutely excellent quality.
