Ballotine of chicken, mushroom and tarragon mouse, asparagus and chicken jus Egg custard tart  June 7th – Bread Foccacia, cured meats and olives Ciabbata – Steak, rocket, mustard mayonnaise sandwich. Brioche – Pan perdu with summer fruit.  July 5th – Pork Pork pie Chinese style belly of pork Eton mess  August 2nd – Summer berries Rump of lamb, redcurrant sauce, pomme dauphinios. Summer pudding Pavlova  September 6th – Chocolate Venison with chocolate sauce Selection of chocolate desserts – Chocolate mousse, chocolate brownie, chocolate souffle  October 4th – Beer Beer battered fish, pea puree.
