Damson jam in Rice Pudding. Thoughts?

As PT says any jam is nice, but dark jam looks very appetising. Dark against white.

Damsons are small rodents native to the British Isles and generally found near watercourses with aspen dominated vegetation.

 

They are hunted with specially trained geese which are able to glide silently and catch them unawares.

Highly prized experienced birds can often catch whole packs of Damsons while grazing, earning the sobriquet "DamsonBusters".

 

The favoured part of the animal are the 'plums' or testes which are simmered with sugar and algate until it sets into a fine tasting jam.

 

Due to the rarity and high prices, the jam tended to be sold on the export market and found favour with the Japanese as a condiment with their dessert rice.
