The Kimchi Project - where to get Korean chilli?

Recently I developed a liking for Korean food and one of the essential ingredients is Kimchi, a kind of spicy sauerkraut or fermented cabbage.

 

I found a recipe to work to online, which is adapted for the UK.

It says Korean red pepper powder also known as gochugaru is essential and suggests buying it online, but with all the oriental supermarkets in Sheffield maybe I can get it here? Does anyone know?

Did you find any in the end? I've not looked in the Chinese supermarkets yet but if you knew it would be great!

How long from making to eating?

What is the shelf life of your Kimchi?

Finally I have good hard green cabbages will these be suitable? It seems that Napa cabbage is the one most favoured.

Strangely enough I just bought some of this myself. Ended up getting it of ‘the spice works’ via eBay.

Apologies Nagel, Iread your post wrongly and thought the link was to buy Korean chilli, anyway I have followed the recipe and hope to get good result.

The more I research fermenting foods the more fascinating it becomes.

they sell Gochujang at Sainsbury Wadsley Bridge and Morrisons in Hillsborough

Can you replace the fish sauce with something else or not use it at all? Interested in ways of making it vegan if possible
