Jeddo   10 #7 Posted August 11, 2016 A warning on sushi.  Raw fish used for sushi has all sorts of bacteria and parasites in it, that's why it's not a good idea to eat raw fish, especially these days as sewage and chemicals get into sea water all over the world. In Japan they freeze fish to be used in sushi down to -70 degrees to destroy any bacteria and parasites.  I was shocked to find this out, and wondered if retail outlets selling sushi in the UK (restaurants and supermarkets) went to this trouble of deep freezing the raw fish for the required period to kill of the above mentioned, Knowing this deep freezing to -70 degrees takes specialist freezing equipment.  I saw the Koko, Ecclesal Road chef on a fag break round the back, so I idled up to him and struck up a conversation. I asked the inevitable question, and he looked at me as if I'd just landed from the moon. Didn't seem to know about any freezing techniques.  Now you can buy sushi-making apparatus in supermarkets, rolling mats, seaweed, sushi rice, but nowhere does it say you must specially prepare raw fish by deep deep freezing.  Is this the next health scare balloon to go up? like raw chicken.  I've not touched sushi since!!! SimpleShef   10 #8 Posted August 28, 2016 (edited) Endo sushi is the best place for sushi/japanese for me, especially if you are going for sashimi (raw) as they are always fresh over there.  Agree with Jeddo on getting sushi, you really need to make sure that the restaurant/chef knows what they are doing when in comes to handling and serving raw fish!!!!  However, they only do takeaways and deliveries.
