does anyone know what its like 1) getting out of sheffield and 2) going on the m1 at, say....12-2 on a saturday?

Not usually a problem unless you go near Meadowhall

It fine. I usually come into Sheffield that way at that time and both sides are pretty free flowing.

Depends whether you going north or southbound on the M1, and where are you starting from.

I wouldn't join the M1 at Jcn 29 southbound going via the Dronfield by-pass - too much traffic delay at Woodseats at midday. I go that way at 08.30 on alternative Saturday mornings, starting from Olive Grove, and the traffic is always flowing freely at that time.
