but I decided to attempt it..
Can anyone give me abasic way of making a mushroom sauce.. Every recipe I've found online looks to have a million squillion ingredients...
like I said.. I'm not a brilliant cook so go easy on me - a basic sauce will be fine

Fry half an onion in some olive oil.
Fry till almost transparent.
Chop a few mushrooms.
Put them in the pan with the onions, add a little salt and a few mins before they turn darker brown add a knob of butter.
Add single cream, chives and parsley (herbs optional) and cook for a few mins till slightly thicker.
Serve..
Yum..

ooh I dunno.. what do you receommend?? ?
He likes spicy (herbs rather than chilli's) or he likes Garlicy
He' not a big fan of potatoes...

butter, herbs garlic and lemon zest mashed up together then formed into logs and frozen solid. Make them about two inches long and about an inch thick.
Two chicken breasts with the skin removed, using a sharp knife make a slit in one side of the breast big enough to insert the block of herby garlicy butter in and wiggle the knife around inside to make enough room, be careful not to cut right through the breast.
close up the slit and dredge in flour, then dip in beaten egg and then in breadcrumbs
Deep fry for about 15-20 mins, if you have an electric deep fat fryer there should be a time and temp guide to follow.
any excess butter can be kept frozen. I would use 1/2 a pound of butter, a big bunch of parsley, a whole head of garlic crushed up and the zest of a whole lemon [unwaxed is best if you can find them].

Instead of forming them into logs, you could always put the garlic butter into ice cube trays, and then if you have smaller breasts, you won't over fill them, or possibly tear the meat.
Wiggling the blade is important though. It means you get a bigger cavity with a smaller entrance.
I never realised how many innuendos could be created about a Chicken Kiev
I'd also add a touch of sage with the parsley, but that's just my preference. If you do, go easy! It's a strong herb!
