Example:
Put date1 in A1 put date2 in B1 in C1 type =a1-b1

Then reformat cell to general or number. (press ctrl+1)

Lots of good Excel date stuff here - http://www.nwarwick.co.uk/ExcelDateHandling.html

To do what you have asked:

To calculate the number of days between two dates use the formula:
=DATEDIF(A1,TODAY(),”d”)

Or to use Xircon's example...
=DATEDIF(A1,B1,"d")

Interestingly (or maybe not) there is a fault on some versions of Excel to do with leap years and subtracting dates. But if all the dates are in 2008, it shouldn't be relevant anyway.

Or setting your excel sheet to use base 1904 should do the trick.

tools ---> Options----> Calculation. Check bottom left box.
