12oz self raising flour
6oz margarine
6oz soft brown sugar
2 eggs
6oz choc chips or chopped chocolate

Put everything apart from the choc into a mixer and whizz up, add the choc last so it stays lumpy.
Put on lined baking trays and bake at around 140 or gas 3 for about 10-15 minutes till just going golden. Put in a airtight container

Chocolate loaf

4oz Margarine,
2oz sugar,
2 tablespoon golden syrup,
4oz S.R flour ( i use gluten free)
1oz ground rice,
2oz cocoa,
2 eggs,
2oz chopped choc or 2oz chopped cherries+ choc

1) Slightly melt margarine and mix all other
ingredients in with it.

2) Spoon into a lined loaf tin and bake for around
40 minutes- it is lovely when still warm

Chocolate brownies

6oz self raising flour, ( or gluten free/wheat free flour, i use this)

6oz margarine,

10oz brown sugar,

4 eggs,

200g chocolate- half chopped up

pinch of salt,

drop of vanilla essence




1) Mix eggs and brown sugar together- put aside.

2) Melt half the chocolate with margarine in microwave.let cool slightly.

3) Add the egg/sugar mix to the choc/margarine mix and beat well.

4) Add the flour, salt, and vanilla to the mixture and finally the chopped up chocolate.Mix well.

5) Put into a lined tin at gas 4 for about 25 minutes, should be slightly soft in the centre.

6) Before the children/hubby arrive home hide it in an air-tight tin!

7)Very nice warm with a blob of cream on top or with vanilla ice-cream, can be warmed in the microwave
