My m/b can support 3GB memory and at present I have 3x 256 MB.
I don't play games but i use Photoshop 5.2 to twiddle with my photos.
Is it worth me spending money(as xmas presents) to get the full 3 MB?

I'd just get 2gb (2x1gb sticks). If you put in 3 one won't be running dual channel and you'd probably not notice the difference between 2gb and 3gb anyway.
