View Full Version : Any new stuffing recipes ?

Mine stuffings made the same each time, i need a change.
I use.....

Sausage meat
chopped onions & cellery
seasoned dried breads
chicken stock
parmesan cheese
bit of grated apple
1 egg.

I don't have to add any seasoning as theres plenty of salt in the chicken stock.

I found one in Good Food magazine....not tested it yet but it looks yum

25g pack each of rosemary and thyme
2 lemons freshly zested
80g pack sliced pancetta, chopped
150g pot of mascarpone
2 onions, thickly sliced

Wash and prepare your turkey pat dry. Strip the leaves from half the rosemary and thyme stalks and finely chop. In a bowl combine the lemon zest, chopped herbs, pancetta and mascarpone. Season well
Halve the zested lemons and stuff into the cavity of the turkey alone with the remaining herb sprigs. Use your hand to loosen the skin lying over the brest of the turkey, to creat a pocket.. Push the mascarpone mixture under the breast skin to create a thick even layer.
Put the onion slickes into a large flameproof roasting tin and put turkey on top cover loosely with foil and cook.

Tis what I will be doing this year!

urgh...don't like prunes!!

I love the way Hugh cooks just not what he cooks with!

I find a splash of fresh orange juice in general sage and onion mix is fantastic!

Double quantity of fresh breadcrumbs to single quantity of vegetable suet + a chopped onion & plenty of salt & pepper bound together with beaten egg, squidged into a well-greased tin & baked separately (about 20 min) coz it's too delicious on its own to use for stuffing the turkey!

You're not alone, pattricia. :suspect: I've been cheating and using Stove Top stuffing for years. Probably not as good as the kind you make yourself, but I've never had any complaints, and it's virtually foolproof.
