View Full Version : Anyone got any good pumpkin recipes?????
Ginger_Kitty 25-10-2005, 14:28 Well, the shops are full of pumpkins, and after scraping out (with a chisel ;)) all the insides of them to make scary lil faces what do people do with the fruit???
I've made a basic soup before (onion, pumpkin, carrot, stock) but what else can we do with pumpkins?????
Recipe ideas please :D

This is an American recipe - only one I can find - and annoying cos of the 'cups', the size of which I have no idea about. Also, I made it without cloves and it was still delicious.
PUMPKIN PIE
2 eggs, slightly beaten
16 ounces pumpkin
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
12 ounces condensed milk
Combine filling ingredients in order given; pour into pie crust. Bake 15 minutes at 425 F. Reduce temperature to 350 F. Bake an additional 40-50 minutes or until knife inserted near center comes out clean. Cool.
Note: When using metal or foil pie pan, preheat cookie sheet in oven at 425 F. When using glass or ceramic pie pan, do not use cookie sheet.
If shallow 9" (2 cup volume) FROZEN pie crusts are substituted, recipe makes two pies. Preheat cookie sheet while preheating oven to 425 F. Bake at 425 F for 15 minutes, reduce temperature to 350 F. Bake an additional 20-30 minutes or until pie tests done as noted above.

officegirl 25-10-2005, 14:42 dont add carrots ,instead sweat a red chillie with the onions and then cook as normal for a soup .at the end blitz to a puree then add coconut milk , tad-da thai pumpkin soup,

insides of your pumpkin, diced into about 2 cm cubes, 1 aubergine, cubed into 2cm chunks, tin of chopped tomatoes, tin of drained kidney beans, finely chopped onion, chopped red pepper, handful of dried apricots and sultanas, 1/2 fresh chopped red chilli, chopped fresh ginger, teaspoon cumin, teaspoon paprika. fry off onion then add everything else and 300mls boiling veg stock, simmer for 20-30 minutes (til pumpkin cooked) and serve with couscous. Makes enough for 4-6 depending on how hungry you are.
bonus is it freezes really well and you can use chilli and ginger powders if you dont have fresh.

An unusual curry that is easy to make yet delicious to taste; take care not to overcook the pumpkin
Ingredients:
1.5lbs.(675g) pumpkin, cut into 1.5 inch cubes
1 large onion, sliced
2 green chillis, sliced lengthwise
2 red chilies, finely sliced
5 cloves garlic
one half of a coconut , finely grated
one inch of turmeric
one inch of green ginger
butter or ghee for frying
Cooking Instructions:
Add one breakfast cup of cold water to the grated coconut and mix well
Mash the garlic, turmeric and ginger, add the red chillis then blend into the coconut water
Put the pumpkin cubes and green chillis into a pan, add the coconut mixture then bring the boil then reduce heat and simmer until the pumpkin is tender but not over cooked
Fry the sliced onion in butter or ghee until browned then add to the pan
Simmer gently for about five minutes, stirring occasionally and adding salt to taste
Serve on a bed of plain white rice accompanied pappadums and lime pickle
PUMPKIN BREAD
Solid vegetable shortening (Crisco) for greasing the pans, flour for dusting the pans.
1 whole package plain yellow cake mix. Duncan Hines works the best if you can find it. If not, any other brand would be fine. Just DO NOT use the type with pudding in the mix! It will be too moist.
1/2 cup packed light brown sugar
1 cup canned or fresh pumpkin puree. (You can substitute 2 mashed ripe bananas to make banana bread, and omit the ground nutmeg and ginger)
3/4 cup buttermilk (if you don't feel like buying buttermilk, sour regular milk by adding 2 tablespoons plain white vinegar)
1/2 cup vegetable oil
3 large eggs
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1. Place a rack in the center of the oven and preheat to 350 degrees F. Lightly grease and flour 2 9-inch or 10-inch loaf pans.
2. Place the cake mix, brown suger, pumpkin, buttermilk, oil, eggs and spices in a large mixing bowl. Blend with an electric mixer on low speed for one minute. Stop the machine, and scrape down the sides.
Increase the speed to medium and beat for two minutes more. Divide the batter between the prepared pans and place in the oven side by side.
3. Bake until the loaves are golden brown and a toothpick inserted in the middle comes out clean. 40-45 minutes. Place on wire racks to cool.
These keep very well wrapped in foil, or frozen.

Curried Pumpkin Soup is my favourite.
I do not know the recipe but I'm sure one of the Forumers will add to this post.

so to make this the pumpkin is just the insides of a pumpkin scooped out and deseeded?
