Hi,

I am wanting to make some health bars 'similar' to flapjacks but without the butter and sugar. The ingredients I would like to use include oats, honey, sultanas, few seeds and nuts. The trouble is with all recipes is that they seem to use a lot of butter to make the mixture 'bind' together but I don;t want to use a lot of butter, I will use some but not 7oz as some suggest to do.
Anyone got any good recipes for the above ingredients?

Thanks,

Jane.

You could use melted marshmellow to hold it together ?

Mmmm thanks, nice suggestion but I'm veggie, marshmallows contain gelatine.

Thanks Anyway,

Could you try Agar agar, the veggie substitute of gelatine?

I'm willing to test samples of the finished product, if you don't mind :)

Dont know how good these taste..........

Ingredients:

1 cup rolled oats
1 cup Rice Krispies
2/3 cup chopped apricots
3 tbsp. roasted sunflower seeds (I didn't bother toasting them)
1/4 cup toasted coconut (I don't toast it)
1/4 cup brown sugar, packed
2 tbsp. vegetable oil
3 tbsp. honey
2 tbsp. peanut butter
1 tbsp. vanilla

Directions:
Melt oil, honey, peanut butter in microwave just until easy to mix up, watch carefuly, probably 20 seconds or so. Mix in vanilla. Mix all ingredients together and press down well into 8-inch square pan sprayed with non-stick cooking spray. Make sure you press down firmly. Bake at 350°F for 20 minutes. Let cool before serving.

I used to make an oat bar which I bound with pureed bananas, ground almonds, grated apples and whatever else came to hand which I then mixed together and baked in the oven. No sugar, honey, oil, flour or anything like that. Very simple to make and scrummy.
