View Full Version : How do I cook butternut squash?

I bought my first ever butternut squash yesterday, so I suppose I'm gonna have to figure out what do to with it now.

Does anyone have any tasty suggestions?

I use them in stew, like a turnip although they tend to fall apart when you boil them. They are also nice mashed with carotts and butter pinch of salt , black pepper and a touch of garlic..

Two ideas to get started with
a) peel it,cut into 1 inch chunks season with salt,pepper,chilli flakes and cumin seed. Drizzle some olive oil over and bake it in a hot oven 'till tender. some garlic cloves scatered in is good too....
or,
b) make soup -
soften a chopped onion in olive oil and add
the squash (peeled and chunked as abovemaybe smaller bits),some roasted red pepper,some cooked smoked bacon,garlic and chopped chilli
cook it down till the squash is starting to soften
cover with good veg stock or water
simmer till all the squash etc is tender
(forgot! - sometimes add a wee bit of tomamto puree)
mash or blend to achieve desired texture - I like it quite coarse
squeeze of lemon to lift it
some fresh basil torn in at the end is nice too

seve with some good bread. Hope you like it.

I've only had it roasted with potatoes and parnips etc.

it was ok.

Cut it into chunks then boil it, once it's soft mash it with a little butter, some nutmeg and seasoning, a few chili flakes if you like and then mix in some soft goats cheese. It's fantastic!

Hmm that sounds lovley.. apart from the goats cheese do you think it would work as well with stilton? I have tried goats cheese but find it just tastes of goat a little too much..

Butter nut squash and sweet potato mash - fabulicious!!!!

I always find peeling and chopping them the hardest bit. They are a bit softer and quicker to cook than normal potatos but take around the same time as sweet potato.

I've also roasted mine with roast potatos and parsnips.

Gillian MacKeith (you are what you eat) has a recipe for Butternut squash and sweet potato soup - can PM you with it if you want :thumbsup:

I'm really excited about my tea now. So many fun things to try! I consider myself a bit of a dab hand in the kitchen, but for some reason butternut squash has never entered my thoughts before. But then a friend said it was low fat ans tasty, so I thought I'd give it a whirl!

Thanks for the offer of the Doc Gillian recipe Hels, but I have her books at home so I can look it up myself.

I just want to go home from work now and start cooking! :thumbsup:

It's great as a soup with a few shavings of parmesan cheese. Has a really rich flavour to it.

You know, I always have it roasted. Stick it in the oven in a tray and roast it whole. Put a couple of knife marks in like on baked potatoes and cook for a couple of hours. It doesn't overdo. Slice in half and eat with butter. Lurvly. Shame my oven is broke at the mo.

Chop it into bits, soften in some boiling water for a few mins (so it goes a little softer, not mushy) and then mix in with other veg/meat in a curry.

Mashed, roasted and soups are also yummy. You can also roast it whole, cut out the seeds bit and stuff the middle with fillings of your choice.

I bought one on a wim and then had to find out what to do with it like you.
We made soup, I think it might have been with apple and lots of cream, all blended up.

I seen these in morrisons and wanted to try one for ages but never know what it tastes like.What do they taste like do they taste like anyother veg you can get ??.

Asdas selling it pre packed already cut in chunks now, i might try mashing it or roasting it as ive tried it in stews before but it tasted very bland to me.

Is very mild, quite sweet, not too dissimilar in taste to veg like carrots, parsnips etc. #i agree with Hels, works really well with seet potato.

To roast, I always chop the top off, cut it in half, de-seed and score it with a knife, rub with a little bit of soft butter and cracked black pepper, I baste it half way through cooking it too. mmmm yummy I love it!!

I have a fantastic recipe for a Butternut, shallot, sultanas and almond tagine. Its fantastic with couscous and yoghurt.

The only problem I have is that the butternut squash tends make me a bit, how shall I say, erm....gassy.

Butternut squash is lovely roasted with peppers. Jamie Oliver uses chillies although they are a bit hot for some people.
