I wasn't sure as I know that you can use salt as a flavour enhancer in some sweet dishes.

And what about that pillock who dressed his plate as though it was a Michelin competition. I doubt many people, myself included, would have the faintest idea of exactly how much skill and knowledge goes into that level of cooking.
I suspected the bee-hive would go through, her sticky toffee pudding looked the business.

There were some dogs dinners tonight but I was so glad to see both of the guys go through in the second programme. They both produced flawless cooking.

Yet again I've got completely hooked on it, which is annoying, as there are so many things about it that irritate the hell out of me. Why, for example (apart from filling the time) do they have the 'professional kitchen' round, when it never makes any difference to who wins or loses?

I noticed on the show a few days ago everyone was given a choice between making Moules Mariniere or Chicken breast in a brandy and cream sauce.
All those that chose to cook mussels added cream to their dish mush to the evident dismay and disgust of John Torode. However when I searched for recipes most of them contained cream. He complained that one cooks sauce was too watery, but they only had wine and the mussel juices to cook with so had could they thicken it without going through the rigmarole of roux making?
How do you do yours?
chinaski 27-03-2010, 11:14 I always add cream to mine, but in the back of my mind I remember that a classic mariniere is basically white wine, parsley, garlic and mussel juice.
I think you then drain the mussels and thicken the sauce by emulsifying with butter and pouring back over the mussels.
One of my favourite dishes, though I quite like the addition of cream.
One element I didn't agree with Torode is about the mussels being undercooked. As soon as they're opened, that's it, they're cooked for me and that's how I like them. However, he was classing them as overcooked. The classic recipes I've seen tend to say the same.

As for the show, I thought it was a bit unjust sending the music exec guy out. His dish may not have been great, but he can clearly cook. The guy who cooked the rabbit looks like a nervous wreck, he'll be in the loony bin before the show is out.
I'm getting fed up and bored of the "challenges" that go on in the first half of the programme, like last night's cooking for the W.I. It's just filler, and embarrassing to watch them make complete rickets. It has nothing to do with the judging or whether or not they'll progress through.

I completely agree. Tonight's episode sunk new depths.
There was an advert for the new series of "Great British Menu" on tonight, which is a great program.
But even that suffers from the hands of some stupid ass producer, who obviously insists on the chefs doing this ridiculous double act whereby they criticize each other in some half-arsed comical way that is cringe worthy.
Some of the poor sods clearly don't have a humorous bone in their body.
I'm a complete masterchef addict but would hate to go on myself. I want Stacey to win and if not her, Dhruv. Agree with the challenge thing, they never take that into account; they're only ever as good as their last dish in the studio. I still like watching it all though, but look forward to the studio bit the most.

Stacie's pudding was a disaster, so badly conceived and delivered. Tim played it simple and nearly lost out. He really needs to improve his game for the final tonight.

Agh! didn't know it was on today!! Will have to catch up on iplayer (even though you say it is a waste of time)! I agree with what you said about Stacie's pudding but she knew she was out too. G&T and cream definitely don't go together. I still think she's cool though and I don't think she meant to do a smiley face. Getting to like the other bloke who's not Tim or Dhruv, can't remember his name- he's getting more confident too.

I agree. Ive made a bet with my husband! Everytime he makes something I really want to eat it. I'm going off Alex as he insists on cooking offal at every opportunity which is not my thing.
weenireeni 07-04-2010, 09:28 Would love Druv to win, most of his meals look gorgeous, his only issues are that he seems to panic when faced with time contstraints, but does get there in the end, and its usually on cuisines he has never cooked before. Wish he was my husband, would be amazing to have someone cook that well for me, I hope he opens a restaurant! His food at the palace looked amazing!

Ay, I half expected him to break out into "Trouble" when they tasted his blue cheese ice-cream. His food was more to my taste than the others, though he didn't have the technical ability as Tim or Druv.
I thought it was a good series, maybe the best. The challenge's didn't drag on too long which helped.
I'm getting ready for a thorough ego bashing when junior masterchef is aired.
