Hi all

Just wondering if anyone knows where I can purchase some Moroccan spices in Sheffield. Just purchased a tagine and require spices such as ras-el-hanot and harissa.

Tesco and Waitrose do both. The Ras-el-Hanout from tesco is very nice indeed. It comes in a silver tin found with the other spices. I think that waitrose also do berberer as well.

This is what I do in my tagine.

Onion diced and about the same amount of celery chopped fine, saute until soft.
add a couple of crushed cloves of garlic
to this add
3 tsp paprika, 2 of ground cumin, 1 of cumin seeds and 1 of ras el hanout. do not allow to burn.
add 2 tbsp of chopped parsley [or one of dried]
add a tin of chopped tomatoes and a good slug of tomato puree

in the tagine put a drained can of chick peas, some carrot and mushrooms. I also add some courgette and baby aubergines [sliced] if i've got some.
quarter up a lemon and put this in as well.
stir in the tomato sauce and add salt and pepper.
put in the oven and cook for about an hour.
after an hour take out and stir, adjust the seasoning/heat by using more ras el hanout or harissa for heat.
salt and pepper some lamb chops and lay them on the top. return to the oven for 30 to 45 mins [depending on the thickness of the chops]
serve with lemon and coriander cous-cous, creme fraiche and lemon slices.
