I'm looking to buy some full copper pans for our kitchen and know that the most famous company that makes them is Mauviel. I recollected having seen copper pans in Selfridges recently. So, I typed in "Mauviel" and "Selfridges" into Google and it came up with exactly one result.

Question: Is this a Googlewack-ish result?

Are copper pans hard to look after ?

I'm just remembering some Victorian kitchen program where someone was going on about having to have to polish all the copper every week.

I think they are no more hard to care for than Le Creuset cast iron pans. One just has to be proactive in drying them after they have been washed!

My Le Creuset pans have got a bit rusty where they are not enameled but the enamel protects the iron that comes into contact with the food, I was wondering if copper pans might get "disolved" by acidic food as the metal is bare, then again you wouldn't use your best pans for making chutney.

True! However, all of the new Mauviel pans are lined with steel so that the copper isn't in contact with the food (it just adds it's heat conducting properties).

Sounds good, iron pans are all well and good but they take ages to get hot and ages to cool down, so their not ideal if you want any control over the temperature.

How expensive are these pans ?

Cast iron is great because it stores and retains heat really well. Copper is excellent because it conducts and dissipates heat really fast. They're good for different purposes I suppose (ie. cast iron for slow, long cooking and copper for browning, frying and making sauces).

Mauviel pans start at about £65 and go right the way up to about £125-£130 for the largest so they're certainly not cheap.

I don't think you've googlewhacked......

I read Dave Gorman's book, and using proper names doesn't count. When the results come back, both words must be underlined in the blue header bar, which means they can be looked up in the online dictionary. Mauviel and Selfridges don't get underlined 'cos they're proper nouns.
