Leading from the 'what's you favourite curry' thread, I'd like to know how you all make your own.

I do a lovely jamaican chicken curry and also a lamb curry, both of which I love.

Come on then with the ideas, I'd love to extend my curry making knowledge.

REcipe for Jamaican Chicken:
Serves 4-5
Ingredients
6 chicken thighs
1 whole lemon (halved)
2 tablespoons of olive oil
1 whole onion (chopped)
1 Madras Powder
Chicken stock
2 cloves fresh garlic
1 tomato
2 thyme
1 parsley
2 green peppers (chopped)
Salt and pepper to taste

Clean the chicken thighs in lemon water (using the halved lemons), and rub in the marinade of madras powder, salt and pepper, fresh garlic and thyme for at least two hours or overnight if possible. When all the flavours have been absorbed, fry in a large pan on a medium heat with the oil until the chicken is golden brown.

Lower the heat and add chicken stock, green peppers and onions and tomato before placing a lid on the pan and leaving to simmer. I leave it on for over an hour when I have time & it's gorgeous. :love: :love:

Gina, please do - I leave it for ages and it thickens up and all the meat falls from the bones mmmmmmmm

Don't even know how much chicken stock I put in actually - I just guess!!!

I like it a little bit more spicy so would usually add more madras powder but see how you like it.

I usually start frying onion garlic and ginger add some spices, either individual or curry powder/paste depending how arsed I can be, then chuck in a tin of tomatoes some veg/meat/beans chuck in some garam masala maybe a splash of plain yoghurt some coriander and voila.

Im sure it'll be nice! I promise to report back.. I'd have it tomorrow but we're going out, maybe Saturday though... Does it have to be chicken thighs though - Could I subsitute with breast?

I find buying a decent curry powder can make a basic curry into something pretty special. As does adding a big spoonful of mixed pickle towards the end if it's lacking in flavour. That said, I try to make my own spice mixes (as in roasting and grinding) as and when I need them, but rarely have time midweek.

A colleague brought some curry powder over from India for me last year. It's double bagged and in jar with a tight fitting lid - and it still stinks out my cupboard. Good stuff!

Yeah you can always do breast, and after your Christmas dinner you can use the rest of the turkey!! Kill two birds with one curry LOL

Oh.. well I think i'll be doing this Thursday night (Shall take the breast out of the freezer now) that means it'll be defrosted by tomorrow, can marinate it then cook it on Thursday!

Im sorry to say, I didnt end up doing it. We ended up getting a takeaway :hihi: BUT this was because I forgot to take the chicken out of the freezer. Have taken it out today, so we'll be having it saturday or sunday :)

I made it last night (for tonight) but with lamb instead of chicken and put in a full green pepper (chopped chunky) and added a bit more chilli and madras to give it a bit of zing when we've been out later.

if you get the chance go to your nearest asda or alternatively check online for shop's that stock it ie : tesco/sainsbury's/asda/morrison's and each probably have their own brand

Not wanting to get shouted at, but would agree with Killa.

I've never been able to get that authenticity that you obviously get from real curry house.

Will take on board the tips listed here though a give it another go.

I managed to find morrisons own Medium Curry powder AND Schwartz Madras curry spices, got both cause I dont know if the madras one is a powder or spices :confused:

Does anyone have any tips on how to make lamb biryani? I said i'd make it tomorrow for my boyfriend.

I think i have all the ingredients its just how to cook it, in a pan or the oven? do i pre cook the rice/meat? recipes seem to differ on this.

The recipes off this site tend to be very good in general though the Indonesian Dry Beef Curry I did the other day was not that great. For the perfect curry the Chicken Jalfrezi is awesome or even better do a search for Mutton Karahi!

You can make curry close to what you would get from a takeaway.

You need to start with a base sauce made by boiling onions and some other veg/spices. Then blend it.

You can then use this to make a variety of curry recipes. I make enough base to make about 5/6 currys and freeze it.

How many onions, and which other veg/spices do you choose to add please?

OK.

Here goes.

600g brown onions
25g fresh garlic
15g fresh ginger
40g tomato paste
175g fresh tomato
40g carrot
40g green chili
20g coriander stalks
4 heaped tsp curry powder
1 heaped tsp salt
125ml vegetable oil
1600ml water

Roughly chop vegetables, tomatoes and coriander stalks
Place all ingredients except the coriander and curry powder in a large saucepan
Cover the pan and bring to a gentle simmer for about 1 hour until the vegetables are soft
Add curry powder and simmer for 5 minutes
Add coriander stalks and allow to cool
Blend till smooth.

curry recipe to follow

3 Tbs spoons of oil
Precooked meat (boil chicken with some turmeric and cardamoms,bayleaf,cloves
tsp of chili powder
tsp Garlic&Ginger paste
Heap tsp of tom puree
Chopped fresh coriander
Salt to taste

Put the oil on heat
Add puree's
Add chili powder
Add some gravy and then the precooked meat
Add more gravy until it looks right
Sprinkle in some coriander
Add salt if required.

this is a basic hot curry, like a madras. You can add fresh chili to this or more chili powder as you want. just experiment with ingredients like dried methi leaves,cardomom pods. There is an excellent grocer in the market where you can get all the right stuff. I use Rajah spices.

you can put lemon/coconut milk in with extra tomato puree for a ceylon

400g spinach
1 tub full fat yogurt
1whole garlic bulb
10 green chilli
Salt to taste
Curry powder to taste
Ginger to taste
100ml oil
Add everything apart from yogurt and spinach to a pan and stir until its well blended meanwhile boil spinach add to other stuff stir on high heat for five mins add yogurt keep stirring until it starts to bubble otherwise it will become bitter..once its bubbling turn heat low cover it up and allow to simmer for twenty min then enjoy

I asked my housemate shes asian and she said you need a biryani mix from a shop asian one or tesco do them they are from a company called laziza and come with full instructions i've tasted her biryani its beautiful

Sounds good, I have enjoyed trying to recreate takeaway curry but I've never tried a Biriyani, Think I'll give it a go........I'm hungry already.
