I'd really love to get involved in a developing business. Even if it's just, to start with, voluntary (unpaid). I work a full-time job at Aviva so it would have to be after work and on weekends. I would not let your employer know what you are up to as they may take exception.
Have a look in google at UK Business Forums, you will find some sites that will answer a lot of your questions.
What area of work are you interested in?

There is no law in this land that says you cannot take on paid or unpaid work to assist someone in their business except, where your employment contracts forbids you due to it being of a conflict of interest.
Exceptions are of course government/public sector jobs that also forbid certain types of paid or unpaid sideline work. Again, contract and staff handbooks should all give the details.

In employment law it is established that there is an implicit term of trust between the employee and the employer not withstanding any omission of such a term in the contract between said parties.
I'm not saying it is an automatic breach of the contract to undertake additional work, but it is worth exercising caution.
For what it is worth, I am in a similar position to the OP.

Years ago I contacted a company offering to work for them for free as I was interested in learning about the business they were running.
Six months later I bought the business off them.
