Using Photoshop I would like to convert a logo to a illustrator file converting it first to paths.

Well, you have to draw paths.... it's not an automated thing (and generally you spend longer tidying up the automated things).

You'd be better importing straight into Illustrator and using curves - they're a bit easier than Photoshop's paths.
