I have just discovered I love cous-cous.:love:
Last night I had it with a nicely seasoned chicken breast, but am wanting more ideas of what to have it with or recipes including it!!

Funny, I just got done experimenting using couscous in place of polenta in my favourite polenta tarts, because I've had trouble finding the polenta I'm used to.

I wish I could give exact measurements and instructions, but I'm one of those off-the-cuff cooks.

I start the oven at 150, prepare the couscous "wet" with chicken stock, and let it sit while I dice a good handful of sun-dried tomatoes, a couple of artichoke hearts, and a small onion and couple of garlic cloves (I like to add diced spinach, but hubby says no thanks.) Mix it all up with, then put big scoops into a muffin/cupcake tray, and toss into the oven for about 40 minutes, or until the tops go brown. Let them cool a bit, and you *should* have some little couscous tarts you can dress up with a sauce or whathaveyou.

I fry red onion, garlic, ginger and finely chopped red and yellow peppers until soft. Then add the couscous and give it a stir. Add a chopped tomato and mint then leave to sit for a while. Just before serving add a touch of boiling water, put the lid on and shake. The couscous should be light and fluffy. Serve with anything.

I also like it mixed with parmesan as a crust for baked fish

I see this sometimes in our canteen.
Chopped some vegetables like red peppers, corgettes, onions, into tiny dice size pieces. Then fry them lightly until soft.

Cook cous cous as usual with hot water until soft. Cool then drain.

Then add veg and cous cous together and warm it up or something, with a sprinkle of lemon juice. Mm... it is very simple, and it does taste very nice.

I used to like ratatouille served with cous cous.

I put a veggy oxo into the water when I'm steeping the plain cous cous to give it a bit of flavour.

I agree with Suzi50... it makes a great substitute for rice or potatoes with a meal like curry or patatas bi elies (potatoes and olives in a tomato stew)

Cous cous is great with lamb :love: There are many recipes, varying in taste, so I will try and put my favourite below:

i make a load of cous cous, let it cool then mix in chunks of feta, olives, pine nuts, cucumber, french dressing and tomatoes. great to take to work
just add any veg/salad and should be tasty!

you can make a cake with cous cous. its from my slimming world recipes but ive yet to try it.

I like cous-cous stuffed in peppers. I usually cook the cous-cous then stuff it into a pepper, mix tomato puree with water and herbs then put the pepper in the tomato sauce in a pan and simmer for a couple of hours until the pepper is soft.

I make proper chicken soup with veggies and a chicken carcass, then add a cup full of cous cous to a portion of boiling soup to turn it into a full meal when I want something a bit more hearty.

It's also great served with any sort of stew-type stuff (veggie or meaty).

My sister makes a lovely pilaff with brown rice, cous cous and mixed seeds, cooked with onions, vegetable stock and lots of lovely things like joloff and all sorts of veggies. It's yummy.

Me and mates usually mix up a batch with some lemon juice, garlic, chilli and fresh coriander (maybe some chopped veg too - courgette works well) and bung it in some pepper halves. Then add a couple of slices of halloumi cheese on top and barbecue with a little foil tent over it so the cheese gets heated as well.

Try using the juice of a lemon for every 100g of cous cous. Soak it in the lemon juice prior to adding about 90ml of luke-warm water per 100g cous cous. You may need a little more. It shouldn't need draining, but should have lots of flavour from the lemon and the actual cous cous. I can't stand it when people boil the hell out of it in a big pan of water!

i love cous cous. i roast veg and mix it with cous cous. also try mixing bazil infused olive oil(you can buy this at supermarket) with lemon rind ,herbs and currants which i soak in water to plump up.

i cheat a bit with cous-cous and buy the ready flavoured ones in a packet. tomato ones are really nice. I stuff halfed pepper and put in oven till browned, add a little cheese on top at end

I bought a huge tub of ainsley harriots cous cous, with peppers and stuff in it, really nice.

Hey Lyndix! Get plain cous cous really cheap from a supermarket. Add stock or lemon juice to water when warming it through. I like to add roast veg and sweet chilli chicken (own recipe), or if you are in a rush but want something decent, add a fish in butter sauce portion to the cous cous and veg instead of chicken! yummy!

The Slimming world cous cous cake is gorgeous, I would recommend making it. If you struggle finding the quark to put in it it's usually with soft cheese in supermarkets.

You can also stuff beef tomatoes and open cup mushrooms before baking them in the oven. A favourite of mine is to get a chicken breast, slicing an pocket in it then stuffing it with cous cous and baking that in the oven, it's lovely and if you use a garlicky flavour is a healthy way of having a homemade chicken kiev style meal.

I had a lovely couscous the other day. Couscous boiled in a spicy stock with mushrooms, red onion, red peppers and raisins. It was delicious.

I usually have cous-cous with quorn chicken fillets and salad, delicious!

You should try it. The raisins add dimension to the spicey stock and they go pretty well. I used a spicey knorr chicken stock for mine, but I suppose you could always deviate and try other stocks.

After some experimenting have discovered and recommend always starting with butter / marg first before you do anything really helps keep the grains separate and always add stock cube to water, stops it being bland, then you can add absolutely anything and will always taste fab.

I did yeah, put a bit of fresh chilli in aswell. very nice.

HOW do you do that. I did it once, followed the recipes the lot boiled my poor little carcass for 3 hours, the flat absolutely stank rotten even with windows open, never done it since. Just wondered!

I just love cous cous because it soaks everything up. Have it with some leftovers and all the juices will soak into it. :)

Delicious moroccan style cous-cous:

Slice up some red onion and fry in a little olive oil until soft and a golden. Add some cashew nuts and stir through until slighty coloured. Then add some sultanas, brown sugar and cover with orange juice and reduce.

Cook the cous-cous according to instructions then stir in the mixture. If the cous-cous is still dry keep adding orange juice little by little.

Finish by topping with cubes of feta cheese and fresh mint leaves!
