only seem to eat cod in fish fingers or battered with chips so wanting to cook some fresh cod, any ideas how? like spicy things.... any suggestions welcome!

Bad_Hair_Day 04-02-2009, 12:23 Hi - I marinaded a cod fillet in teriyaki marinade (soy sauce, chilli, honey & sherry) then griddled it in a really hot pan and served it whole on top of a big noodle, prawn & veg stirfry. Served it on a platter in the middle of the table and everyone just helped themselves to it. It was baked with a herb and polenta crust, served on a bed of cabbage and leeks with a little mashed potato. It was very very yummy. taxman 04-02-2009, 16:30 A crust of cooked couscous and parmesan is nice on top of a fish. You can always vary the ingredients in the crust by adding ginger, chllies, lemon, mint, anything you like really, then simply bake in the oven. Godzilla 04-02-2009, 18:30 My favourite spicey cod recipe: (serves 4) You'll need 4 tablespoons of oil, 125g grated coconut, 5cm piece of ginger chopped, 1 large onion chopped, 4 cloves of garlic finely chopped, two green chillies seeded and chopped, 2 tablespoons of finely chopped coriander, 4 tablespoons of lemon juice, salt 1kg (2lb) cod steak or cod loin. Heat the oil in a pan, add the coconut, ginger, onion, garlic and chillies. Fry gently until the onion is translucent. Add the coriander, lemon juice and solt to taste and simmer for 15 mins or until coconut is soft. Oil the bottom of a baking dish just large enough to hold the fish. Arrange the fish steaks/loins side by side and pour over the spice mixture. Bake in a pre-heated oven - 160C (325F) Gas Mark 3 for 25 mins or until tender. Mr Godzilla is not keen on coconut so I leave this out. I don't usually put salt in either. Spices can be adjusted to personal taste.
