Just found an 800g beef roasting joint in the freezer, theres only two of us so I'd like to do a few different things with it! apart from roasting, any ideas anyone?

Well, if you can be bothered, a good shepherds pie is often best made with chopped beef as opposed to minced, though it can be a job chopping all the beef unless you have a good knife.

I sometimes buy these joints if they're on offer and slice them up and use them in oriental soups. Once you make your broth, lay the raw thin slices of beef at the bottom of the bowl and just pour the stock over with some noodles, or beansprouts even, and top with chilli and coriander.

Ok, I know, but at least I tried. (and anyhow, I bet you've ALREADY roasted it). ;)

I usually turn any leftover roast beef into a cottage pie although I don't bother with chopping it just shove it in the food processor. It's nice done with a topping of mash made with about 2/3 potato and the other third a mix of carrot, swede, squash, parsnip, sweet potato - any of the above mixed in. I also add a small leek to the mash.

The simplest solution is to see how much is actually left over.

The left over roast beef is usually very tasty on french bread sandwiches with a touch of English mustard, eaten at work a day or two later.

Yes we had that in Liverpool when I was a kid. We had it without the pickles though.
It was rather good, as I remember.

Why not try pot-roasting it. Get a large dutch oven type pot, put a couple of tablespoons of oil in there and brown your meat,turning it on all sides. Then add a cup of water and a few shallots. Cover as tight as possible, bring to boil, then turn the heat right down and simmer for a couple of hours or until the meat is tender. When it's ready add a tin of small mushrooms, a few olives and cook for another 15 minutes or so. You can put some garlic in with the onions if you like. It's called 'Western Pot Roast', an old American recipe.
