Happy new year everyone! :)

Back at work today and trying to keep to the new years resolutions of being a bit healthier and making my lunch at home to save money!

Has anyone got ideas for healthy packed lunches? I'm a veggy...

I sometimes make myself salad boxes or pasta boxes, pretty much like the ones you can buy in supermarkets, but a lot cheaper.

Or I have made my own sandwich fillings. Egg mayo is a favourite.

I have made a cous cous and goats cheese box today, we now have a microwave we can use, so thinking about things that are easy to make and re-heat!

Just get very bored with sarnies!

I have been making a lentil soup that keeps really well and can be frozen. It is very filling too.

1 onion, chopped
100g red lentils
1 pint veg stock (i use veg stock cube)
1 400g tinned chopped tomatos
1 garlic clove, crushed
1 tsp of dried thyme
1 dried bay leaf.
black pepper to taste.

Put all ingredients in a pan. boil for 5mins. simmer for 25-30 mins till lentils are soft. Either enjoy as it is or blend.

add curry paste to that lentil soup and make it into a curried lentil soup, its gorgeous. i also use carrots and potatoes in it and make it really chunky. and turmeric

also Quorn ham, cheese, gerkins, picklelil (cant spell), lettuce and tomato sandwich is really nice,
pasta bake (pasta, mushrooms, sweetcorn, courgette, peppers and onion and cheese with one of those ready made pasta bake sauces). cook your pasta and fry or grill all your veg. when the pasta is done put a layer in a big oven proof dish (thats deep), then a layer of veg, then sauce, then repeat this till full then sprinkle lots of cheese on top. put in oven for 20-25 mins ish on 180. then leave to cool on side then put in fridge. then you can microwave it at work!

if we have spag bol (I'm veggie too) for tea, then I usually get a portion of that with spaghetti or pasta to pop in the microwave the next day. Also get soup, tinned or homemade, occasionally get fritatta or quiche :). We have a toaster at work and I've got some 'toasty bags' to make toasted sandwiches :)

my favourite sandwich filling is sliced avocado, spinach salad, sliced mushroom, mayonnaise & garlic pepper .. yum :):):):love:
