Erm...

I make Spag Bol and Shepherds pie with Veggie Quorn mince all the time... just standard frying to mince adding chopped onion/ mushrooms and then a bol sauce.

Pretty Quick to do ...

Sheps Pie... again fry the mince... then add a cup full of hot water and a veggie oxo cube and then bring that to the boil so it thickens. Add some gravy and peas/carrots if you like.

Then place in a container, cover with mashed potato and bake in the oven for 10/15... perfect!

You can make a basic curry using quorn pieces (these are available at most supermarkets). Just fry the quorn, add a jar of your fave curry sauce (or even better, make your own...but I'm not quite that advanced) and simmer for about 10-20 minutes. Serve with rice and nan bread.

Ummm

Quorn stir fry? Just fry the quorn and add your fave vegetables and a few beanspouts. Fry for about 4 mins and then add noodles and a sauce.

I make a savoury mince with quorn mince, using storecupboard/ canned ingredients for speed.


"brown" the pack of quorn mince with a chopped onion, and a splash of oil. (you need a smidge of oil , as quorn is v dry) in a large wok/ pan

when the onions are softened,add about a pint of waterand a veggie oxo/ other veggie gravy browning/ thickening to your taste.

throw in your choice of canned veg, (sweetcorn, peas, carrots, etc) and add a tin of new potatoes diced.

simmer the gravy down, until thickened to the consistency you like.

serve with pancakes or yorkshire pudding(s)

it's delicious.

another recipie i love, is Carribbean Chickpeas

Ingredients:-

approx 1- 2 tablespons of oil, for frying
a can of chick peas(drained),
a can of tomatoes
an onion
clove or two of garlic (to taste) crushed
1 teasp Turmeric
I teasp Garam masala
a 1/3 of a block of creamed coconut, chopped
1/2 pint (400ml) water

fry the onion, and the garlic/spices in the oil
when onion is softened, add the tin of tomatoes, chopped and the water
add the can of chickpeas, and the chopped creamed coconut
simmer till thickened, and then serve with rice, Couscous or other grain of your choice.

you can vary the recipie to include vegetables of your choice, this recipie also works particularly well if you substitute sweet potato (cooked, and diced, then added near the end of the simmering) and a can of mushrooms, for the chick peas.

if you contact the vegan society in sheffield, they produce a couple of booklets with some brilliant meat/ animal-free recipies in them, the recipie for puy lentil sheperds pie is lovely.

Vegetarian Chilli....

Fry quorn and chopped red onion in a little olive oil until slightly browned. Add one can of chopped toms, half a can of red kidney beans, half a can of baked beans (yes really), a spoonful of bulgar wheat and a splash of red wine. Season with chilli powder and cumin according to taste, and finally the secret ingrediant that goes into all my cooking - a dash of Helmans!


Cook on a low heat for about half an hour. Serve half with rice, and freeze half to use next time you can't be arsed to cook! I'm going to defrost one of these tonight!

Another goodie that doesn't involve quorn is vegetarian quiche...

Make up shortcrust pasty (or cheat and add water to the ready made stuff!) and line a quiche dish. Cover with tin foil and bake in a hot oven for 10-15 mins. Meanwhile mix up a basic quiche filling using four free range eggs, onions lightly fried in a touch of garlic, about a quarter of a pint of milk (skimmed if your dieting) and as much cheese as you fancy.

Then you can add pretty much whatever else you want. For quiche lorriane pop in some veggie ham or bacon. My personal favourite is grating in a bit of blue cheese, then mixing in lightly steamed broccoli and leaks.

Then the finishing touch - a dash of Helmans!

Pour the mixture over the pasty, and bake on a medium heat for about 30 minutes. You can also put freshly sliced toms, herbs or goats cheese on top if you wish.

Making a quiche does take about an hour, but then if you pop it in the fridge it will feed you for the rest of the week!

The recipies on this site all use oats - lots of them are vegetarian - main courses plus snacks, biscuits, soups and puddings - a great selection.

This one is a really easy but rather top filling for a jacket spud.

Bung your jacket in the oven, preferably rubbed in olive oil and sea salt to get it nice and crispy.

For the topping you'll need:
Quorn pieces (as many as you fancy)
an avacado
1 - 2 sweet apples.
Mayonnaise or salad dressing.

Fry your quorn pieces until cooked through.
Cut your apple and avacado into bite sized chunks and then mix together.
Stir in a tablespoon of mayonnaise or use oil-based salad dressing if you're vegan.

Pile into jacket and scoff. This is really nice in summer with a big salad and warm french bread.
