Is there any way of deterring slugs & snails but without killing them?

You could try surrounding the plants you wish to protect with something like sharp grit or crushed egg shells. They apparently don't like to slither over the rough texture. You can also buy stick-on copper tape to wrap around plant pots. It's meant to deliver small shocks to their slimy undersides.
