You can boil and mash them, though I find they can be a bit watery. What a good idea.!:thumbsup: Must confess I have never tried it deep frying, but I cut them up, spray with a littl oil and bake them, which is how I 'chip' other things. Ye, I can well imagine, because Ive noticed that they cook very quickly. I love them roasted with a few herbs and spices, maybe with a few other vegeables roasted up. If I have lots of them sometimes I keep he left over ones and add them to salads. Thinly slice them and layer in a dish. Personally I'd either mash them and add to potato or use them in a casserole with lamb and Moroccan spices. I have a Moroccan cookbook and have used them with beef, shallots and various spices, slow cooked then served with couscous and yogurt. They are more related to the carrot than the potato, so have less carbohydrate and more protein |
