View Full Version : Kabanos Sausage (Polish Sausage)

You can get it from supermarkets but it is nowhere near as nice as the sausage from Castle Markets was dryer and thinner and probably authentic (supermarket varieties are rarely authentic).
Does anyone know where I can get Kabanos from - only the good stuff though.

Like you Dimitri I'm a huge fan of Kabanos and also like yourself much prefer the thinner drier variety which used to be obtainable from Castle markets.
I make do with a brand called 'Morliny' which is available at Morrisons at the moment. Bought one from a market stall in Derby a few weeks ago but it was dissapointingly over-moist and fatty.
Best I've had in the past few years was from the Polish delicatessen in the Victoria Centre, Nottingham, but it's a long way to go for a sausage and I'm not sure if the stall is still there.
The other thing I think which distinguishes the really good stuff is the presence of what I think is fennel seed in the spice mix.
Given the relatively large number of Poles currently living in Sheffield hopefully somebodies importing some of the really good stuff at the moment. If they aren't perhaps they ought - they could make a bob or two!

This is the main problem with Kabanos that I have bought from supermarkets, there are sometimes chewy pieces of gristle in them as well. If I hadn't had the fortune to have eaten the 'Castle Market' variety I might not turn my nose up at the 'Supermarket' variety but I have eaten the 'proper' stuff and it's incomparable....... so far.

Lol, I like this sausage but not that much:) I don't even drive or I might have possibly made the journey at some stage.

Im not sure as I don't know exactly what goes in them but there is definitely a big difference between the good and bad stuff. The good stuff had a more reddy-brown skin whereas the bad stuff is paler.

Id buy it on a weekly basis without doubt. I have bought some from a Polish place (supposedly Polish anyway), one of the shops next to Abbeyfield Park on Burngreave/Barnsley Road, and it wasn't good. It was moist and fatty - it was a pre-packed variety so I shouldn't have been expecting much although the packaging was entirely in Polish.
Any Polish people reading this thread and worried about the effects of the credit crunch......................... open a stall and sell genuine Kabanos..........PLEASE!

I'd rate it as a good seven.

True, it needs to have very little 'give' if you press it between your fingers too.

I used to buy Kabanos from that very stall every visit. I'd not had it a lot before I started buying it there but after it closed I noticed the stuff from supermarkets is pretty crappy in comparison.
There are a couple of shops on London Road that seem to be run by Polish people, I am going to try there at some point.
BTW maybe this should be moved to the Foodies forum. It would probably get better responses in there.

It is across the road from the Abbeydale Cinema about 5 minutes or so from the bottom of the Moor on the 97, 98, 75, 76 buses.
Konrad Kempka is Polish (or at least his parents were/are) and he definitely has the sausages you mentioned. Also incredible value pork, bacon and other meats. The normal english style sausage is wonderful as are the pork pies. He also has lots of other ingredients like stock and soup powders, tinned vegetables and beetroot and sauerkraut in jars. Rye breads, various cake/biscuit type things and wonderful chocolate covered plums. My Christmas isn't complete without some of Konrads plums.
Not open Sunday Monday or Tuesday.

Anyway, will have to try some - but I think I'll wait for you experts to make your mind up about where to get the good stuff. ;)
cloudforest 13-10-2008, 11:08 I'd agree with Halibut and give the Morrison's kabanos a 7. asda do one too but I'd only give it a 2 as it is a bit fatty and nowhere near as tasty.
I use it in risottos and paellas to give them a bit of a smoky flavour.

It's nice just on it's own as its quite flavoursome. Some dips go nice with it as well - I am not sure what the names are but there are those trays of dips where there are 4 of them and the reddish one goes nicely with Kabanos.
Anyway, will have to try some - but I think I'll wait for you experts to make your mind up about where to get the good stuff. ;)
I'll let you know once ive got hold of some of the thin dry stuff. You might like the other stuff better as it's just personal choice but as it seems to be supermarkets that have the fatter, moister variety it's mostly not going to be as good.
the poliosh shops on london road all have them under the counter in the fridges and the waitrose ones I really like
