Same happened to me, my poatoes literally disintegrated and they definitely weren't overboiled. I grew 2 varieties and it only happened to one of them, sorry can't remember name. Hopefully this was just due to a very wet summer. I would avoid desiree in the future!

I think desiree is better for baking, roasting and chipping.

Try rocket.

we have desiree they are the best all rounder and its never happened here
