Thaaaaankkkkkkkkkkksssssssssssss!!! :) ASPGuru 16-09-2008, 09:44 Simple way to use up any meat left over from a roast chicken... Simply mix up the meat with a can of condensed soup (Campbells mushroom or chicken & mushroom works well). Chuck in some peas, mushrooms, any ham you want to use up, sweetcorn or anything else that takes your fancy. Up to you if you want to do a full pie (pastry top & bottom), or just a topper. Brush with beaten egg or some milk. Chuck in an oven at about 190/200ish for 30-40 mins until the pastry is golden and the filling is warmed through thoroughly. *binty* 16-09-2008, 11:02 That sounds lovely ASPGuru! Another chicken pie, is to fry 3 chopped leeks, 2 stalks of chopped celery, 1 chopped onion for a few minutes, chuck in chicken (I think it's around 450g), when chicken is cooked, add a spoon of flour, and stir it in well. Then add 450ml's of chicken stock and stir. Season and add some dried thyme. Bring to boil and simmer for 5 minutes. Put in a dish and put a lid of puff pasty on top and cook like the pie above. I had one last night too :D Used Campbells chicken and wine wine condensed soup and put onions, leeks, carrots, chicken and mushroon in it and topped with puff pastry... just had the leftovers!
