The last time I did a 'slap up' meal I made a Goats cheese and red onion tartlet with a handful of salad on the side for the main course - it wasn't difficult to make and also didn't take long to make so I didn't spend all my time in the kitchen. Strawberries and a blob of cream for dessert nice and simple. Anything simple for a starter if three courses is the way you want to go; or seeing as it's your partner's birthday which is the occasion - make his favourite food. What other people expect isn't necessarily what you have to produce - it's your partner's birthday after all so it's his day really.:)
