View Full Version : Any nice recipes for chorizo's & salami's?

I bought 5 different chorizo-type salami/sausages at the continental market last week...

chorizo
garlic flavoured
chilli flavoured
duck
venison

I like eating them on their own, but sometimes they are shown off to their best in a nice recipe.

For example these are the recipes I use already:
Slow Cooker Jambalaya

150g small pieces raw chicken
150g andouille sausage or chorizo, sliced
1 tin chopped tomatoes
1 onion & 1 pepper, chopped
500ml chicken stock
oregano, parsley, Cajun seasoning, cayenne pepper, dried thyme
150g frozen cooked prawns without tails
1 cup brown rice

Mix all ingredients except prawns together in slow cooker & cover. Cook 7 to 8 hours on Low, or 3 to 4 hours on High. Stir in the prawns during the last 30 minutes of cook time.

Griddled chicken with chorizo and butter bean mash

2 boneless, skinless chicken breasts, butterflied
100g chorizo, sliced
1 red onion, 1 red pepper, 1 yellow pepper, all sliced into thin strips
1 garlic clove, peeled and finely chopped
1 small red chilli, finely chopped
2 tsp balsamic vinegar
6-8 fresh basil leaves, roughly shredded

FOR THE MASH
2 x 410g can butter beans, drained and rinsed in a sieve
1 small garlic clove, peeled and finely chopped
2 tbsp olive oil

griddle chicken on it's own. Meanwhile stir fry onions, peppers, garlic & chilli. add chorizo & stir fry. splash in the balsamic.
While doing that, boil the butter beans and mash them.

make a stack on the plate with butter beans then the butterfied chicken then a topping of the rich dark spicy chorizo mixture. Especially a suggestion on how to use the duck one as I don't know what that's going to taste like yet!

We make chorizo and spinach pasta which is fab but pretty rich

Chorizo and scallops are a match made in heaven, just gently fry the chorizo until it releases its fat, then fry the scallops in it.

You can also try cooking it in the bbq.

You will need the chorizo in one piece, not the one that comes in slices.

Just wrap it in kitchen foil and put in just on top of the hot ashes, and after a while the fat of the chorizo should start burning and chorizo will be nice and roasted.


If you check any Spanish cooking book should be hundreds of recipes using chorizo.

If you check any Spanish cooking book should be hundreds of recipes using chorizo.The chorizo is easy but the other ones I bought are more difficult because their flavours are more subtle and I don't really know what to call them in a google search!

Chorizo and Spinach Pasta

You will need...

Chorizo
Shallots
Spinach
Lemon Juice
Cherry Tomatoes
Pasta

What you do...

Cut the chorizo into bite size pieces and in a clean dry frying pan cook gently until it releases its oils

Take out of the pan and keep warm

Using the oil increase the heat and fry the onion until it softens, once it has some colour and has started to soften add the tomato flesh until it starts to break down.

When this starts to happen reduce the heat and add the chorizo back to the pan

Once the sausage is warmed through add big hands of spinach and wilt it in the heat

Take it off the heat and stir cooked pasta through the mix, plate it up and squeeze lemon juice all over it

Ooh that sounds really yum - definitely gonna give that a go :) sounds like it could go with any of the different sausage varieties I bought.
It's very similar to our favourite dish at the moment - tagliatelle, spinach, cherry toms, mushrooms, parma ham, chilli seeds & halloumi cubes.

The chorizo is easy but the other ones I bought are more difficult because their flavours are more subtle and I don't really know what to call them in a google search!

In Spain main dishes with chorizo are Lentils, Chick peas, Beans (all kinds), and vegetables / potatoes. Most off them quite heavy in the stomach.

Also something quite nice is to fry it in white whine or cider.....
