Hi, this is the first time ive posted in this section as Im not the best of chefs!
Me and my OH have been goin through abit of a rocky patch but thankfully now we seem to hav worked thru our problems and things are looking up for us! :clap:
Anyhow as I've got 6 weeks off work (sorry Im not gloating!) I thought it might be nice for me to make him something really nice for tea one day this week...this is where you guys come in to help me!
What can i cook??? :help: I was thinking of some sort of a chicken dish but not too complicated!
Any ideas will be warmly welcomed!

I love this,
take 2 chicken breasts and cut a pocket in both, as small on the side as possible........ wilt some spinach and then mix it with some ricotta cheese...... stuff the chicken with the ricotta and spinach then wrap some bacon around the chicken.
Place in the oven till the chicken is cooked through. It is lovely.

This is from Jamie Oliver's how to cook - i make it quite often and it's never failed but is so simple.
2 chicken breasts
2 leeks
pancetta
olive oil
white wine
thyme
butter
Salt and pepper
Wash and chop the leeks into rounds and put in a baking dish. Add some thyme leaves (say about a tablespoon ish), a good glug of olive oil, a splash of white wine, a few knobs of butter and toss it all together so all the leeks are covered.
Lay chicken breasts on top and lay slices of pancetta over it all. Add a touch more olive oil on top and a couple of sprigs of thyme. Put in oven at about 200 electric for about 30 minutes. Make sure the pancetta is nice and crispy.
Serve with jersey royals and peas - or whatever you prefer.
It takes about 45 minutes from start to finish and you really can't go wrong with it.

This is so easy it's beyond belief.
2 chicken breast fillets cut "butterfly" style. Dust the chicken with flour on each side, season then fry in hot oil for about 5 mins each side or until lightly golden and cooked through. Transfer to warm serving dish. To the frying pan add 1/4 pint of chicken stock, 2 teaspoons lemon juice, 2 cloves crushed garlic and a knob of butter. Cook for 2 minutes then pour over chicken. Done! (as Gordon Ramsey would say).

Oooh thanks guys there all great ideas! I might take steelerbabes idea of doing stffed chicken breasts and stuff them with sum mushrooms!
Two chicken breasts with the skin removed then slashed across 3 times. Marinade for a couple of hours before putting in a covered dish in the oven [200c gas 6] for 30 mins
Marinade
Juice and grated zest of 2 large oranges juice and grated zest of 1 lemon
2 tbsps runny honey 1 - 2 tbsp of soy [1 of dark or 2 of light]
tbsp fresh chopped parsley or 1 tsp dried
1 clove of garlic finely chopped 1 tsp grated ginger
mix all the above together, you can add more orange juice if you have it around
when the chicken is cooked, remove the breasts and thicken the sauce, I usually use arrowroot [about 1 tsp mixed with water like you would cornflour] as it doesn't make the sauce cloudy.
serve with buttered new potatoes and whatever veg takes your fancy.
