I used to use oxo Indian cubes

but i cannot find them for sale anywhere so how do i make proper authentic pilau rice?
Well it differs from place to place but I made this which is nice:
450g basmati rice
1 medium onion (white)
lge knob butter
4 cardamon pods
8 cloves
1 cinnamon stick
2 bay leaves
pinch saffron threads
600ml chicken stock/ veg stock/ salted water
Wash the rice and leave to soak 30 mins (not that essential) the drain.
Gently cook the onion in the butter and add all the spices and cook for another 2 mins
stir it the rice so it is coated with the butter
Add the stock, bring to the boil and cover with a tight fitting lid without a vent. (I use a frying pan with a fitted lid)
turn right down and leave for 10 minutes without checking it, then turn off the heat and leave it for another five minutes again without lifting the lid at any point!
Fluff up with a fork.
You might want to fish out the cloves, cardamon, bay leaves and cinnamon if you don't want to have a taste explosion!
