I do love baking but desperately need more recipes.
What cake recipe do you use and do you have any secret baking advice.
My secret (well not sure if its a secret or if I just didn't realise everyone did it) but I leave the cake mix in the fridge for a few hours before I pop it in the oven. This seems to produce the best cakes

I've never done that with cake mix so thanks for the tip. The fridge treatment definitely works with scones and pastry too.
Here's my old Mum's super-easy Malt Loaf recipe:
Preheat oven to mark 3. Grease a 1lb loaf tin and line with greased greaseproof paper.
Big mugfull each of - All-Bran, sultanas, soft brown sugar, milk. Mix together in a big bowl and leave for at least an hour. Mix in 1 mug of self-raising flour, blend in thoroughly, put in loaf tin and bake on the middle shelf for 1 1/4 - 1 1/2 hours.

*Peaches* 07-07-2008, 05:26 PM I always leave cake mix to stand for a while before I put it in the oven. Make sure the oven isn't too hot, I find lower heat for longer raises better cakes. I also find a little vegetable oil in the mix helps the cake to come off the tin much better.

It would help if my link worked, the recipe is banana and walnut tea bread undr the scones and tea bread recipes section on the bero website.
Works every time - just check with a skewer to check is is fully baked before removing from the oven.

mbunting 12-07-2008, 11:42 AM I know the OP asked for vanilla cheesecake but I could not resist sharing this one, it is heaven ! Baileys Chocolate Cheesecake !
Base - 4oz gingernut biscuits crushed, 2oz chopped hazelnuts, 2 1/2oz melted butter.
Filling - 1lb (450g) Dark chocolate, 2oz caster sugar, 12oz (350g) light cream cheese, 3/4 pint (450ml) double cream, 2floz (50ml) baileys.
Base - Mix ingredients together and press into the base of 8" spring form cake tin and chill.
Filling - Melt chocolate, then in a bowl, beat together cream cheese and sugar till smooth, fold in lightly whipped double cream, fold in melted chocolate and baileys. pour mixture onto chilled base and level surface. chill for 4 - 5 hours then serve.
discodown 12-07-2008, 11:51 AM For my basic cheesecake mix I use 250g of light cream cheese and 200g of marscapone cheese, beaten together with caster sugar and lemon juice to taste and then you can add what you like to it.
I would say for vanilla cheesecake use a pod rather than essence

3/4 tsp bicarb
6 floz veg oil
6 1/2 oz brown sugar
4 eggs
3 1/2 floz golden syrup
14 oz grated carrot
1 1/2 oz pecans or walnuts
Baking time 1hr 35 mins
Sift the flours, spices, bicarb into bowl. Whisk together the oil, sugar eggs syrup - form well in the dry ingredients and stir in gradually. Stir in the carrot and nuts.
Enjoy!

pinkgirl 14-07-2008, 11:38 AM 7oz S.R flour (or gluten free flour)
1 teaspoon baking powder
5oz Vanilla Fudge
3 eggs
3oz melted butter
1oz light or dark brown sugar
Icing
2oz butter
1oz golden syrup
2 tablespoon milk
7oz icing sugar
1oz cocoa powder
1 Put fudge in a microwave safe bowl and microwave
for 2-3 minutes
2 Put other ingredients in a separate bowl and whisk untill smooth
3 Beat in melted fudge
4 Put into 18 mini muffin cases or 7-8 large muffin cases
Bake 10-12 minutes for mini ones or 15-20 minutes for large
ones.
Icing
1 Melt butter, Golden syrup and milk together
2 Sieve Cocoa and icing sugar together and beat
all ingredients together well. Spread over muffins
and let set

100g dark chocolate
100g butter
2 eggs, beaten
230g caster sugar
100g SR flour
150g raspberries
- Melt chocolate and butter together over a low heat.
- Remove from heat and beat in eggs, sugar & flour
- Add raspberries and mix gently.
- Pour into (around 10) muffin cases and bake for 20 mins @ 180C/160C/gas4.
Let cool - to serve, remove from cases, microwave for 30 seconds & serve with lightly whipped cream :D

Anyways, I got a letter from her this morning and guess what was inside :D

One for fruit cake, one for coffee and walnut and another for chocolate and coconut!
Anyone wants one of them let me know I don't mind sharing!

That's the one I use and is very nice. I have just made the Brack tea loaf from Bero and I love it.

I dont know what it is but the older generation (no offence) seem to have a knack for baking, my mums baking was fab too, she used to bake the most amazing scones mine are rubbish, more like biscuits. Does your Nan have a recipe for these too.

I do this one too. I have found its really good if you leave a little of the chocolate back and cut into small chunks and put it in with the melted chocolate and baileys it gives a lovely texture.

I can't believe the difference it makes to a sponge cake.
Mine used to be sagging disasters, but now they are fantastic....even though I say so myself. :blush:
Supermarket eggs are often as much as 3 weeks old and the protein structure changes so the sponge isn't as successful.
Another tip - given to me by a neighbour whose cakes are orgasmic, is to weigh the eggs in their shells, and then use the same amount of sugar, flour and butter.
The results are superb - much better than 4 oz of everything and 2 eggs.
