What are your favourite recipes of the moment?

Here's mine - it's Parmigiana de Melanzane, or Aubergine Bake. I took it from Rick Stein but do my own tomato sauce with it. I have done this for dinner parties as well as normal tea and it's always gone down really well. Not diet food though - a lot of olive oil goes in it!

To serve 4-6 depending on how much you eat!

Tomato Sauce: Heat olive oil, then fry one crushed clove of garlic and a teaspoon of crushed chilli flakes for a minute or so, then add one finely chopped red onion. Cook until the onion is soft and then add one jar of Sugocasa (crushed tomatoes). Bring to the boil then simmer for 20-30 minutes or so until it has reduced to quite a thick sauce. Use chopped tomatoes if you don't want to use Sugocasa, but it's better and can be bought in Sainsburys with all the tomatoes.

Take 4 aubergine and slice them lengthways about 1cm thick. Heat a griddle pan and brush the aubergine with olive oil (plain, not virgin). Griddle for a couple of minutes each side - you want it to be soft but not collapsing as it needs to retain it's structure. You have to do this in a number of batches so keep going until it's all done.

The sauce and the aubergines take about half an hour each so get the sauce on then start the aubergines - should be ready about the same time.

Get a baking dish big enough and put half the aubergine on the bottom, cover with lots of torn up basil, then a big spoonful of tomato sauce and then slices of Taleggio cheese. You can use mozzerella but Taleggio is better and can be bought in Sainsburys, stick it in the freezer for an hour before as it will be easier to slice. Sprinkle parmesan over.

Do another layer of everything, finishing with the cheeses and bake for about 30 minutes at 200 (not sure what gas mark-5? hot, but not too hot!)

Serve with salad and garlic bread

Generally, do 1 aubergine per person, and half a block of Taleggio will do 2 people so you can make it for 2, 6 or whatever depending on size of your family.
