View Full Version : How do you make your gravy?

I tend to fill a pan with water and add onions, mushrooms, a stock cube or two, and pepper and simmer till the onions are soft then add the juices from the meat before thicking with granules.
If I cook beef I roast it in foil with a touch of water and chopped onion in the foil and pour that into the gravy.

I make it in the roasting tin. I add a spoonful of plain flour to the fat and juices in the pan, mix until it forms a paste, then gradually add stock and the water from boiling the veg. No granules!

For beef gravy, I add a glass of red wine to the roasting tin, then onion water, add a pinch of herbs, season and thicken with browning or cornflour, once meat has rested I pour that juice in as well.
Can only do chicken gravy with the carcass not the remains of the roast. Boil the carcass with a bouquet garni, an onion and whatever other veg I have, strain, season and reduce, then add some thickener.

I always cook my roasts in an inch or two of water, in a covered pot, effectively steaming them, hey presto, instant stock!

I drain the stock off and finish the roast off to make it suitably crunchy, and use the stock (with oxo or similar and cornflour) to make gravy.

I'll add onions to the roasting tin if i'm doing beef to make nice onion gravy

Any veg water also gets added if the gravy needs watering down a bit :) carrot water is best :)

The meat is cooked in some water and red wine or
cider if pork, water from onions is added to juices
along with bisto best and more wine/cider :)

Speaking of gravy does anyone know where you can get gravy salt? I used to get it from the co-op. I only have a bit left (lasts ages) and know the local co-op no longer sell it - any ideas?

My mother in law uses gravy salt and had run out a couple of years ago - i found some and paraded back with it - very pleased with myself! Thing is, i can't quite remember where i found it - pretty sure it was Waitrose though so have a look there.

Right, i have a bit of a search on line and it seems that you can buy Comptons Gravy Salt from Morrisons. I checked on Waitrose and it doesn't mention it in product search

Veg water or potato water, oxo cubes in a pan add onions if I fancy them. Meat juices, then thicken with plain flour. mix the flour with cold water or margerine so you dont get lumpy bits. Oh and if im making a pie a splash of hendersons for my OH because he loves it.

Thanks for that will have a look - I use gravy salt in stews as well as just gravy to give a nice rich brown colour.
